Some people converted to Islam to avoid the poll tax for non-Muslims, but after conversion they were liable to a charity tax called zakat which is obligatory on Muslims but not on non-Muslims. Some people have converted in Islam in pursuit of career opportunities, but non-Muslims could still own land, operate workshops, sell goods, or even work for the government. So, for example, the personal physician of Saladin himself was Maimonides, otherwise a famous Jewish philosopher, astronomer and physician.
By the way, Arabization started when the Umayyads declared Arabic the official language of government, replacing Persian in the east and Greek in the west and some local languages everywhere else…
