Given the majority of Palestinians were being offered just 45% of the land whereas the Zionists from Europe, were going to be gaining something they never had and 55% of it, one can appreciate why the non-Jewish Muslim and Christiian populations might have been less than ethusiastic to sign up to the UN partition plan at first.
That said, the extremists in the Zionist movement were not happy with the plan either, which is why they assassinated the first UN mediator having already driven the British out of Mandate Palestine with a series of terrorist attacks. The Zionists groups were seizing additional Palestinian land using violence against Palestinians before the war of 48 broke out.
